Big Vegan covers everything from pantry staples to desserts. None of the 350 recipes uses processed foods or fake meats but instead each relies on staples like beans, grains, and tofu. Some even show you how to make your own mock beef and duck, or lentil sausages. Dishes were tested on her family, friends and some of the students in Asbells cooking classes. She says the encouraging thing was lots of people who werent even vegans loved them, too.
